Spinach Stew
 
Rich in Folate and Vitamins A, B6, B12 and C. Contains Carotenoids and Lutein.

Serves: 4

Ingredients

1 tablespoon vegetable oil
1 medium onion, finely chopped
1 portion cooked minced meat
1 portion coriander and garlic
1 teaspoon salt
¼ teaspoon pepper
¼ teaspoon ground cinnamon
¼ teaspoon black pepper

500 g frozen chopped spinach
1 cup water
2 tablespoons pine nuts, toasted
4 tablespoons lemon juice

Preparation Method

In a large pan, heat oil, add onions and stir-fry until lightly browned.
Add meat, coriander and garlic portion and seasoning gradually, stirring constantly.

Add spinach and water.
Stir and bring to boil.
Add remaining ingredients.
Cover pan and cook over low heat for 15 more minutes or until mixture thickens.

Add more lemon juice and salt to taste.

Serve hot with rice and vermicelli.

Tip: if the meat was not previously prepared, start by cooking 150 g of raw minced meat.
