Chocolate Chips Muffin

Ingredients

1 ˝ cup all purpose flour
3 tbsp cocoa powder
2 tsp baking powder
1 tsp sodium carbonate
1 dash salt

2 eggs
˝ cup brown sugar
˝ cup vegetable oil
˝ cup plain yogurt, skim

Cooking spray
Muffin paper
4 tbsp semi-sweet chocolate chips

Preparation

Mix flour, cocoa powder, baking powder, carbonate and salt in a bowl.

With a cake mixer, lightly beat the egg with the sugar, oil and yogurt until homogenous. Do not over mix the mixture.
Gradually add the flour mixture and mix thoroughly until a smooth batter is obtained.

Spray a muffin pan (capacity of 12 small muffins) with the oil spray. Place the muffin paper in the 12 spaces and pour half the batter into each.
Spread the chocolate chips evenly and then cover with the rest of the batter.
Place pan in a preheated oven (180°C) for about 20 min or until bakes.
Set aside for 5 minutes to cool.

Serve muffins.
