Niceoise Salad
 

Rich in Vitamins B3, B6, B12 and C.

Contains Isoflavone, Omega-3 fatty acids, Phenolic Acids and Zeaxanthin.

Ingredients

5 lettuce leaves, finely minced
2 potatoes, boiled and diced
2 tomatoes, sliced into 8
200 g green lima beans, boiled
200 g tuna in water, drained
2 tablespoons seedless black olives, sliced

Dressing
1 garlic clove, crushed (p 11)
2 teaspoons yellow mustard
1 teaspoon salt
1 pinch white pepper
1 pinch red pepper
2 tablespoons vinegar
3 tablespoons lemon juice
3 tablespoons olive oil

Method of Preparation

In a serving plate put lettuce, potatoes, tomatoes, lima beans, tuna and olives respectively.
Mix garlic well with mustard and seasoning.
Add remaining ingredients and mix well.
Add to salad just before serving.
Tip: Prepare large amounts of dressing for later use. It could be kept in the fridge for 7 days.
