Ingredients
1 tablespoon vegetable oil
3 medium onions, finely chopped
2 garlic cloves, crushed
2 tablespoons flour
4 cups chicken broth
1 teaspoon salt
teaspoon white pepper
4 slices soft bread
cup light yellow cheese, grated
Method of Preparation
In a large pan, heat oil, add onions and garlic and stir-fry until dark brown.
Add flour and stir constantly for 10 more minutes or until mixture turns into very dark-colored paste.
Add chicken broth gradually, stirring constantly until paste dissolves. Bring to boil.
Add salt and white pepper.
Cover pan and cook over low heat for 40 more minutes.
Keep aside.
Remove the edges of bread slices and toast them.
Add 2 tablespoons of cheese on each slice.
Put in 4 separate onion soup bowls.
Pour over 1 cup onion soup.
Put in preheated oven (250C) until cheese is melted and golden.
Serve hot.
Tip: If chicken broth is not available, use 2 fat-free chicken broth cubes in 4 cups of water and remove salt from recipe.
